EASY YELLOW CUPCAKES WITH CHOCOLATE FUDGE FROSTING

                 

                   Absolutely overjoyed!....My first attempt at baking cupcakes! wooo hoooooo.....!!!! they looked perfect (atleast to my eyes)......never knew making cupcakes were so easy! the mixing was all in 1 bowl... no two separate bowls for the wet and dry ingredients!....ahhh...how nice!...so easy on the cleaning!...and making the frosting was so relaxing!....love working with chocolate...im sure alot of you agree with me that cooking with chocolate and just not eating it is indeed comforting! :)

INGREDIENTS:

yellow cupcakes:
1 1/2 cups (195 gms) all purpose flour
1 cup (200 gms) white granulated sugar
1 1/2 tsps baking powder
1/4 tsp salt
1/2 cup (113 gms) unsalted butter, room temp cut into pieces
1 large egg, room temp
2 large egg yolks, room temp
1 1/2 tsp pure vanilla extract
1/2 cup (120 ml) sour cream or whole plain yoghurt,  room temp

chocolate fudge frosting:
4 ounces (120 gms) unsweetened chocolate,coarsely chopped
2/3 cup (150 gms) unsalted butter, room temp cut into pieces
1 1/3 cups (160 gms) icing sugar, sifted
1 1/2 tsp pure vanilla extract

garnish:
coloured sprinkles (optional)



PROCESS:  

for the yellow cupcakes:
  • Preheat oven to 350 degrees F (177 degrees C) and lightly butter or line 12 muffin cups with paper liners.
  • With an electric mixer, beat to combine the flour, sugar, baking powder and salt. 
  • Add the butter,egg, egg yolks, vanilla extract and sour cream.
  •  Beat the wet and dry ingredients together at medium speed until the batter is smooth and satiny, about 30 seconds. 
  •  If necessary, stir the batter with a rubber spatula until the flour is fully incorporated.
  •  Evenly fill the muffin cups with the batter and bake for about 20 - 25 minutes or until pale gold and a toothpick inserted into a cupcake comes out clean. 

  •  Remove from oven and place on a wire rack to cool. 

  •  Once the cupcakes have completely cooled, frost with icing. You can either spread the frosting on the cupcakes or pipe them on as you desire.
  • top with sprinkles

for the chocolate fudge frosting:
  •  Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature.  
  •  In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth and creamy (about 1 minute)
  •  Add the sugar and beat until it is light and fluffy (about 2 minutes).  
  • Beat in the vanilla extract

  •  Add the chocolate and beat on low speed until incorporated. Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2 -3 minutes). 



note:
  •  never pipe/apply the frosting when the cupcake is hot. It will melt and change the colour of the frosting
  • these cupcakes are best the day its made. but will keep for a few days at room temp ..........................if any is left ;)

MOCCHAI KOLUMBU/ FIELD BEANS


                  This my comfort food. My all time favourite puli kolumbu!! yum....the lovely smell u get when you temper the red chillies, garlic and curry leaves,.....sigh! :)
                  This recipe probably has a long list of ingredients, but has the simplest of procedures!
                   Mocchai kottai has loads of vitamins. so this is probably the yummiest way to eat it!!



 
INGREDIENTS:
8 pods garlic
1 tsp fenugreek seeds/ vendhayam
2 dried red chilli
1 stick curry leaves
1 drumstick, cut into few pieces
2 brinjals
1 cup mocchai kotta / field beans ( soaked in water the previous night)
 20 shallots / chinna vengayam
2 tomatoes, chopped
1/4 tsp turmeric powder
2 tsp coriander powder
1tbsp kolumbu masala (i used aachi kolumbu masala)
tamerind (little bigger than a lime size) soaked in 1/2 cup water
1 cup water (APPROX)



PROCESS:
  • Drain the mocchai and put it in a pressure cooker with a little water for about 1 whistle. Remove from flame and keep aside.
  • In  a frying pan add a little oil. temper the red chilli, garlic and curry leaves.
  • Then add the shallots and saute till slightly brown. Add the fenugreek seeds.
  • Add the drumsticks and the tomatoes.

  • stir for about 2- 3 mins.
  • Add the turmeric powder, kolumbu masala and salt.. stir and cover for few mins.
  • add the cut brinjals.
  • in  a small bowl strain the tamerind juice. add the coriander powder to the tamerind water and mix well.
  • pour the tamerind water to the pan and stir.
  • add required amount of water to the pan. bring to boil.
  • Add the mochhai and cover. check for salt.
  • let it simmer for a few more mins and then switch off the flame.

TUtTI FRUITI BUNS AND MORE AWARDS!


           

 Another successful attempt on making bread/buns. Perfect for breakfast with your favourite jam or just eaten plain as a snack. This will be a huge hit with the kids at home.....love the colour! :)I felt like a kid again playing with all that fruit....Recipe got from here

INGREDIENTS:
1 3/4 tsp active dry yeast
1/2 cup warm milk
1 tsp sugar
1 cup atta
1 cup all purpose flour
1 tsp salt
1/2 cup water (or little more required to make the dough)
1-2 tsp oil
1/2 cup tutti fruiti
few spoons milk to brush
1 tsp butter



PROCESS:
  • combine the yeast, milk and sugar and rest for 10 mins
  • In a large mixing bowl combine the flours and salt.
  • Make a well in the center and pour the yeast mixture. mix
  • Add the tutti fruiti.

  • add water and knead to make a smooth and soft dough
  • Add the oil and continue kneading for 10 mins
  • Leave in an oiled bowl 

  • cover with a towel. let it rise for about 2 hours

  • Punch down the dough to remove all the air.
  • shape into 6 balls and place on a greased baking tray with enough space between them.
  •  cover with a towel and keep in a warm place to rise for about 30 mins
  • brush with milk and place in a preheated oven and bake at 180 deg celcius for 1bout 15 mins

  • after they are done brush with some melted butter to give it a nice shine.
